Banana Flax Seed Bread

Moist, tender, healthy and quick to make, Banana Flax Seed Bread combines the sweetness of banana and crunch of flax seeds to create a loaf that is high on dietary fibre. Flaxseed is one of the best sources of omega-3 fats which are good for the heart and when powdered in food is even more potent. Banana is a healthy fruit that aids digestion. Together they taste nutty and soft and make for a great handmade, heart healthy breakfast recipe. This bread is also quick to make and takes very little prep time. Toasted almonds can also be added for a bit of crunch.

 

Ingredients

  • All purpose flour – 1 and 1/2 cup
  • Flaxseed powder – 1/4 cup
  • Baking powder – 1/2 tsp
  • Baking soda – 1/2 tsp
  • Cinnamon powder – 1/2 tsp
  • Nutmeg powder – 1/2 tsp
  • Granulated sugar – 1/2 cup
  • Brown Sugar – 1/2 cup
  • Eggs – 2
  • Olive oil – 1/2 cup
  • Yogurt – 1/2 cup
  • Ripe bananas – 1 cup ( Mashed )

Procedure:

  1. Pre heat the oven to 180 degrees C.
  2. Line a loaf pan with parchment paper.
  3. Mix flour, flaxseed powder, baking powder, baking soda, cinnamon powder, nutmeg powder, granulated sugar and brown sugar in a bowl.
  4. Mix eggs, olive oil, yogurt and ripe bananas in another bowl.
  5. Mix dry ingredients with wet ingredients.
  6. Pour the batter in the prepared pan.
  7. Bake for 30-35 minutes until a toothpick comes out clean.
  8. Cool the loaf on a wire rack.
  9. Cut into slices and serve.

Notes:

Serving Suggestions: Banana Flax Seed Bread tastes great when paired with Strawberry Flax Seed Smoothie.

Change It Up : You can also add walnuts or almonds to the batter before baking the bread.

Prepare in Advance : Powder the flax seed in advance and use when required.
